ODFGA Hosts a Sold-Out 4th Annual Wild Game Banquet & Fundraiser
On a beautiful June evening, the Okotoks & District Fish and Game Association (ODFGA) welcomed members and guests to our 4th Annual Wild Game Banquet and Fundraiser. The sold-out event, held under the spacious canopy of The Ridge Event Centre, brought together friends, family, and supporters for a memorable night in support of local conservation and community projects.
A Culinary Adventure Featuring Wild Game
Guests were treated to an extraordinary menu, expertly crafted by our talented culinary team. The banquet featured an array of wild game dishes, each one highlighting the diversity and flavour of responsibly harvested Canadian game. Highlights from this year’s menu included:
- Assorted Game Sausages with crackers and chutneys during cocktail hour
- Confit Pheasant Rillette Crostini with cranberry gastrique and red cabbage
- Canada Goose Pastrami on honey grainy mustard rye with dill pickles
- Mushroom-Stuffed Antelope Roast with Brussels sprouts and maple bacon
- Slow Roasted, Black Garlic-Crusted Elk Loin with carrot mousseline and red wine jus
- Bear & Tomato Osso Bucco served over creamy polenta with sage butter
- Lemon-Crusted Baked Rockfish with fennel slaw and arugula pesto
- Assorted Dessert Platters to finish the meal
Guests were delighted with the unique and thoughtfully presented dishes, many of which offered a rare opportunity to sample wild game not commonly found on restaurant menus.
Celebrating Conservation and Community
Throughout the evening, members and guests heard about the ODFGA’s ongoing conservation initiatives and community programs. Funds raised during the banquet help support local projects, education, and wildlife habitat improvements throughout the year.
